Favorite ingredients #1 (of many)- more to come….
The avocado; hmmm? I eat em. I adore em. But who woulda thunk to eat em? Kinda ugly. Kinda fugly, but oh so delicious! Melt in your mouth, smooth and creamy and so very versatile. Yum, I love the avocado!
Also known as as alligator pear or aguacate in Spanish this fruit is technically a large berry. Whatever is is, I sure do enjoy them!

Avocado salsa (not guacamole)-
Never makes enough…!
3 ripe avocados
1/2 a small red onion, minced
1 yellow bell peppper, finely diced
2 roma tomatoes, seeded and finely diced
2 scallions cut into fine rings
2-3 cloves garlic, minced
Juice of two limes
Juice of one lemon
Dash or three tabasco
Salt and pepper to taste
Splash of water
1 tbl. avocado oil
Seed and peel the avocado and dice into 1/4 inch cubes. Lightly toss with the remaining ingredient being careful not break up the avocados too much. The water at the finish will create a delectable “sauce” for this salsa., leaving it both slightly chunky yet runny.
Enjoy as a complement to grilled fish, beef, chicken or eat with tortilla or chips!
