This classic Spanish tapas is a delicious appetizer that I liken to comfort food. Spinach and anchovies creates a delightful blend of flavors combining the rich saltiness of the anchovies and the delicate and subtle flavor of the spinach to meld into a to die for filling.

At Applewood, we have created a more “Americanized” version for our happy hour menu utilizing, three types of cheese,a bacon for the filling and then pairing a chive sour cream dipping sauce to finish; now this rendition is the cat’s meow, so stop in for happy hour and try them!

These sweet corn fritters are to die for right now with the late summer corn in full swing. Crisp kernels, right off the cob, fresh and full of sugar make for an amazing treat. Hatch New Mexican roasted green chilies are my preference, but just about any good quality canned chili will work for this recipe. They make for a great appetizer but certainly are also an excellent side dish for a grilled flank steak or perhaps fish; and go without the apple sauce if the fritters are served as an accompaniment.
