Sweet Corn Chowder with Lemon Thyme-
Serves six-
* 3 ears sweet corn, kernels removed
* 1 medium onion, finely diced
* 2 cloves garlic, minced
* 1 carrot, cut into a fine dice
* 1 small red bell pepper, cut into a fine dice
* 2 ribs celery, cut into a fine dice
* 3 small new potatoes, cut into a small dice
* 8 cups vegetable stock
* 1 cup 1/2 and 1/2
* 1/4 cup light roux (flour and butter )
* 1 tablespoon minced lemon thyme
* Salt and pepper to taste
Sweat all the vegetables together, except the corn, in a dash of oil until they are translucent. Add the corn and corn two or three more minutes. Add the stock and the potatoes bring to a boil. Simmer until potatoes are tender, about 10 minutes, and add the roux to thicken. Stir in the thyme and the half and half and season to taste. Serve immediately.

This is an amazing spring soup full of robust flavors and subtle earth tone nuances of the up coming summer. Looking forward to when the garden will produce a vast array of greens and vegetables for enjoying.
